Pfeffernuesse (Peppernuts)

I made these cookies for our friends who came over last Sunday. There were 4 kids in the group and they gobbled them up. These cookies are perfect for kids because they are small and not crumbly. I love sweets that have molasses or brown sugar in them, so these are some of my favorite cookies. The fresh ginger also adds a nice flavor.

1/3 C molasses (If you live in Laos, you can use 1 1/2 cane sugar circles since they are more available and just as good. They will dissolve as you melt them with the butter)

1/3 C butter

2 C flour

1/3 C sugar

1/2 t baking soda

1 t cinnamon

1 pinch salt

1/2 t black pepper

1/4 t nutmeg

1/4 t ground cloves

1 egg

2″ fresh ginger, ground to a pulp or grated (or 1 t dry ginger powder)

Melt the butter and molasses together.

Combine flour, sugar, baking soda, cinnamon, nutmeg, cloves, salt, and black pepper.

Stir in egg, ginger, and molasses mixture.

Roll into balls with smaller than 1″ diameter.

Bake in a 375 F oven on ungreased cookie sheets for 10-12 minutes
