Mango Crepes

James is a great crepe maker and this is the recipe he learned as a kid.  I improvise the sauces when James makes crepes and mango sauce is one of our favorites.  This time I flavored the sauce with vanilla, but usually I use cinnamon and I like that version better.

Crepes

2 C flour

2 C milk

2 eggs

  1. Mix everything in a blender
  2. Pour into a hot ungreased frying pan, filling up the entire bottom of the pan each time.

Mango Sauce

2 mangoes, diced

1 T water

2 T sugar

1/2 t cinnamon (or vanilla extract)

  1. Combine the mango and water in a small saucepan over low heat.  Stir often.
  2. Add sugar and cinnamon
  3. Continue cooking until the sauce is a good thickness, 5-10 minutes.

serves 2-4 (We eat a lot of crepes, so only 2 servings for us!)
