We love this soup and probably eat it once a week. James says it smells like pizza. I used to make this soup with tomato juice, but the store ran out and hasn’t stocked it again! That’s okay though because this version has a nicer texture with the tomato chunks. Great with some wheat bread on the side.
4 C tomatoes, chopped
1/4 onion, chopped
2 garlic cloves, chopped
2 T olive oil
3 T flour
1 t salt
1/4 t black pepper
1 T mixed Italian spices (or just oregano or basil)
1 1/2 C milk
- Saute the onion and garlic in the olive oil until soft.
- Add the flour and cook very briefly.
- Add the tomatoes, salt, pepper, and spices. Cook until the tomatoes have broken down – about 10 minutes.
- Add the milk
- Turn down the heat and cook only until warmed through.
