Tomato Soup

We love this soup and probably eat it once a week. James says it smells like pizza. I used to make this soup with tomato juice, but the store ran out and hasn’t stocked it again! That’s okay though because this version has a nicer texture with the tomato chunks. Great with some wheat bread on the side.

4 C tomatoes, chopped

1/4 onion, chopped

2 garlic cloves, chopped

2 T olive oil

3 T flour

1 t salt

1/4 t black pepper

1 T mixed Italian spices (or just oregano or basil)

1 1/2 C milk

  1. Saute the onion and garlic in the olive oil until soft.
  2. Add the flour and cook very briefly.
  3. Add the tomatoes, salt, pepper, and spices. Cook until the tomatoes have broken down – about 10 minutes.
  4. Add the milk
  5. Turn down the heat and cook only until warmed through.

serves 3-4
