Whole Wheat Buttermilk Pancakes

We had these for dinner with peanut butter and homemade syrup (not maple). So good! Our whole wheat flour has some whole wheat pieces in it that are nutty and crunchy in these pancakes. I substituted for the buttermilk by putting one tablespoon vinegar in measuring cup and then filling it the rest of the way with milk (twice). Then I let it sit for about 5 minutes before stirring it in.

Mix together:

1 C whole wheat flour

1 C white flour

2 t baking powder

1 t baking soda

1 t salt

Add and mix:

2 C buttermilk

4 T vegetable oil

2 egg

Cook in a greased pan.

  1. You and Carol are the only people I know who put peanut butter on their pancakes. It’s funny, but I get it – it’s so good!

  2. We have a guest right now and she tried peanut butter on pancakes and liked it too. James was a little harder to convince :-). Last year, Jolene used to make me peanut butter and brown sugar sandwiches – so good!
