Vegetarian Chili in a Pressure Cooker

I know I’ve said it before, but pressure cookers are awesome.  It blends the flavors together like a crock pot does, except a pressure cooker does it a lot faster.  This chili was delicious.  It really had that rich spicy taste that chili needs and it didn’t taste like a wimpy vegetarian version (some veggie chilies just taste like vegetable soup!) Cornbread

This is my mom’s cornbread recipe (except she uses shortening instead of oil). I love cornbread. It’s great with soup, for breakfast, or as dessert with syrup over it. This recipe is not too sweet and has a solid texture. (more…)

Apple Galette

I love that galettes are like pies, except less fussy.  You don’t need a pie pan or any skill at shaping a pie crust.  This probably works with a variety of fruits, but I know that it works with peaches. (more…)

Peach Galette

Something like a peach is in season right now.  It doesn’t look like a peach very much because it’s greenish on the outside and pale green on the inside.  I think it’s just that no one lets them get at ripe as we would like them.  It’s okay if you use them in baking though – they turn orange and taste peachy!  I might even like them better than a normal peach in baking because they have a nice tartness to them like a green apples does.  This galette was delicious, but I don’t have the proportion of crust to fruit right yet (too much crust).  So I’m going to try this again with apples and then post the new and improved recipe!

Black Beans and Rice

This is a really common meal for us.  It’s simple, tastes great, and is healthy!  Top with shredded cheese and chopped tomatoes if you like.

Ingredients:

rice

1 C dry black beans, soaked overnight

1 3/4 C water

1 small onion, roughly chopped

3 garlic cloves, cut in half

1 t salt

1/4 t cayenne pepper (or chili powder but more of it)

2 t whole cumin seeds

  1. Start cooking the rice.
  2. Put all the ingredients in a pressure cooker and cook for 15 minutes.
  3. Adjust the spices and salt
  4. Serve over rice and garnish with cilantro
