We love this soup and probably eat it once a week. James says it smells like pizza. I used to make this soup with tomato juice, but the store ran out and hasn’t stocked it again! That’s okay though because this version has a nicer texture with the tomato chunks. Great with some wheat bread on the side. (more…)

Lao Lao Mojito

I adapted the Cuban mojito so that it can be made in Laos. I haven’t seen rum since I got here – I don’t know why because they do import other Western hard alcohol. Lao Lao is probably the most consumed alcohol in Laos. It’s made from rice and a lot of people make it in their homes. I don’t know how it compares to sake, but you could try substituting sake and see how it goes. Rum is the most authentic option though, if you have it. (more…)

I recently had the first peanut butter and jelly sandwich of which I made all the parts from scratch! Yummy! There’s no pic for this post, but you know what peanut butter and jelly looks like. Try it yourself – it’s worth the extra effort.

Tart Plum Jam

Plums are in season lately, which is great because they’re one of my favorite fruits here. We even have some plums from the 2 plum trees in our yard. I’m not that into making jam, but I love this jam and it’s pretty simple to make. Also, you don’t necessarily need canning supplies and pectin to make some jams, including this one. The pits in the plums actually have pectin in them that helps the jam thicken (at least these plums do). If you store this jam in the refrigerator and eat it within a month or 2, you don’t need to be so particular about having the right kind of jar or sealing it closed with heat. (more…)

Homemade Peanut Butter

Peanut butter here is expensive, but peanuts are not, so I learned how to make peanut butter from some friends. I eat a lot of peanut butter and I actually prefer this to store bought peanut butter. You could use dry roasted peanuts without the red skins and skip the first two steps, but you might like the taste of freshly roasted peanuts better. (more…)
